When Sandals Resorts first decided to open a brick oven pizzeria, we appointed Dino Cavallo, a master pizza chef from Naples, Italy, to create the pizzeria and train chefs to make the most authentic Italian pizzas. He did such a great job that we named the pizzeria after him - and the rest is history! Soy Sushi Bar

There's nothing quite like the dining experience at Soy Sushi Bar, a quaint restaurant tucked behind bamboo fronds and adorned with unique Oriental d&ecaute;cor, dim lighting, and fresh, delectable sushi. Giving guests a taste of the Far East with traditional and contemporary sushi creations, Soy is named after soy sauce, a customary ingredient in the art of sushi. This remarkable sushi house offers exciting flavors and exotic sushi creations made-to-order. The Jerk Shack

Believed to have originated with Jamaica's Arawak Indians, jerk cookery began as a preservation method. The Maroons of Jamaica, who once sought refuge in the island's Blue Mountains, eternalized the Arawak's ancient jerk technique by spicing or seasoning the meat, wrapping it in leaves, then placing it on hot rocks over a lattice of wood. This technique evolved with the use of different spices to the cooking style that we know today as Jerk. At the Jerk Shack, chefs apply the jerk cooking style using a marinade or paste that incorporates pimento (allspice) and scotch bonnet peppers used in Jamaica and brought to St. Lucia.
